6-ingredient teriyaki tofu wrap

For JMac’s Recipe-of-the-week, I present you, a 6-ingredient teriyaki tofu wrap!
Protein-packed teriyaki tofu wrap
I hate airport food with a passion and for a multitude of reasons: the cost, the lack of healthful vegetarian options that won’t wreck my stomach, the long lines to order, etc. These are just a few of the reasons I always pack my meals and snacks before taking off. Fortunately for me, these same concepts also work great wherever I need to bring my lunch along - like a day spent hiking with my family.
Trader Joe’s
The majority of these ingredients can be purchased at Trader Joe’s, or made from Trader Joe’s ingredients, ie: the pickled onions. But as I explain below, you can substitute any of these ingredients for ones you can find at your local grocery.
Teriyaki tofu wrap ingredients:
Trader Joe’s 100% whole wheat flour tortillas
Trader Joe’s Organic Baked Tofu Teriyaki Flavor - sliced into approximately ¼ pieces
Cucumber - thinly sliced
Pickled red onions - sliced into 1/2 moons
Greens: Dealer’s choice. Examples include microgreens, spinach, romaine + arugula
Optional Ingredients:
your favorite organic cheese
sliced tomatoes
Directions:
Spread pesto down the middle of the tortilla
Layer the remaining ingredients on top
Roll the tortilla by folding sides in and then bringing the bottom flap up and continuing to roll
Place wrapped burrito with open seams facing a warm skillet and lightly sear until shell turns a golden brown.
Flip and repeat.
Wrap in tin foil
Voila!
Notes:
All of these ingredients can be substituted and mixed and matched.
You can use any kind of tofu here, but it may require additional steps, ie: draining, seasoning and cooking. The work is already done for you with this one.

Feel free to sub any store-bought pesto, or make your own. I like the added nutrition from the kale and the protein from the cashew.
This wrap works well with any type or size of tortilla. Opt for a burrito-sized tortilla if you want a large wrap.
My favorite tortillas are made by Siete, but in our experience, they don’t hold up well for this kind of wrap.
If you add tomatoes, keep in mind that it will make your tortilla wet quicker, so you may only want to add this if eating right after making or risk a soggy wrap.
We like to take the extra time to sear the tortilla for a nice texture, but if you don’t have time, or don’t want to, feel free to skip this step.
Can be made the night before, which is especially helpful for early morning travel.
