cauliflower mash

Move over mashed potatoes, Thanksgiving has a new hero in town. Don’t get me wrong, I love a good mashed potato dish full of decadent dairy, but I’d rather save my indulgences for small tastes of all the goodies vs using up all my quota of things that might not make me feel so great, all on one dish. (everything in moderation. if you love mashed potatoes, you should absolutely have mashed potatoes, but maybe balance it out by reducing the amount of bread you eat, or limit the mac & cheese you pile on your plate or snacks you nosh on from the cheese platter.) This cauliflower mash will satisfy your mashed potato desires :)

Ingredients:

  • 1x large head of cauliflower, cut into florets

  • 1x tart apple, cored, peeled & roughly chopped

  • 1x parsnip peeled & roughly chopped

  • salt & pepper, to taste

Optional ingredients:

  • Your favorite seasoned olive oil, ie: truffle, garlic parmesan, etc (to taste, but if you are looking for an approximate amount, I’d say 1-2 tbs)

  • Trader Joe’s everything seasoning (start with 1 tbs and add more as preferred)

  • Fresh horseradish (1tbs +/- depending on taste)

  • Nutritional yeast (1tbs +/- depending on taste)

  • Diced chives (for garnish)

Directions:

  • Steam the cauliflower florets, apples and parsnips roughly 10- 15 minutes (you want to be able to easily pierce the veggies + fruit with a fork)

  • Transfer steamed veggies + fruit to a blender, add salt & pepper, and blend until smooth.

  • Add your desired optional ingredient or garnish and serve!
