spinach aioli

Ingredients:

  • 2 cups spinach (organic if possible)

  • handful of cilantro

  • 1/2 - 1 clove garlic (depending on the size of the clove and how much you 💚garlic)

  • 1/2 lemon, squeezed

  • 2 tbs chia seeds

  • 1/4 cup Vegenaise

  • pinch of sea salt

Optional Ingredient(s):

  • nutritional yeast: add according to taste. I would start with 1 tbs and add more for extra cheesiness

Directions:

  • toss all ingredients into a blender and blend until smooth. If you like a runnier consistency, feel free to add 1 tbsp of water at a time.

Notes :

  • try to let the garlic sit on the counter for about 10 minutes. letting raw garlic sit triggers an enzyme reaction that boosts its healthy compounds, allicin

  • I like having this spinach aioli with a homemade veggie burger like the one pictured above from the terrific Plantyou Cookbook.

  • this recipe made about 2 servings. I really load my bun up with this stuff though, because I want to increase my greens’ intake without having a vegetable other then homemade fries, on the side. 😆

  • I love a good condiment, so I also used this as a dipping sauce for our air-fried french fries.
